A gin from an old recipe, with a little help from the modern world.
On a trip to Auckland, James found an old Irish chemistry book containing a recipe for “A Fine Gin”. Naturally, the only sensible thing to do was run it through the still.
The original recipe used some wonderfully old fashioned botanicals, including Grains of Paradise and Calamus Root. It was fascinating, but it needed a little freshness.
It was crying out for freshness and after a few experiments, cucumber, orange peel and Lemon Myrtle brought the recipe to life.
The result is smooth, refreshing and wonderfully different, with orange, cucumber and sweet ginger spice.
A little bit of 1800s gin, reimagined in Cambridge.
