Somewhere between Tuscany and Cambridge...
On a trip through Tuscany, James became fascinated by the botanicals growing all around him. Wild juniper, bay, sage, rosemary and olive trees were everywhere, and the flavours of the place seemed to follow you wherever you went.
He came home wanting to capture a little of that experience in a gin.
The botanicals came from the garden here in Cambridge. The olive oil came from James' good friend David, who lives on the Tuscan coast.
The result is a savoury style gin that brings the two places together. Fresh orange and rosemary sit alongside juniper, bay and sage, while the olive oil gives the gin an unusually smooth, rounded character.
It is fresh, savoury and distinctly different.
